1. Wellness Procedures for COVID-19 Safety
As you may know, we at Alight Chiropractic really take our patients’ safety and wellness to heart. We have several safety measures in place to protect you and our team. All those who enter the clinic for a visit will complete a short wellness questionnaire and have their temperature taken as another precaution. We hope that these procedures will provide a sense of security for our Alight community.
2. New Workout Routine
As I’ve mentioned before, I’m working on my fitness again, but from home this time. I’ve introduced a Pilates instructional video that I’m trying, but I wanted to share a core workout video that I’m enjoying as well! It’s Tiffany Rothe’s Lean Lower Abs Workout (Part 2). It targets the often-neglected lower abdominal muscles, which are so important for core strength and stability.
Disclaimer: Please consult Dr. David before starting any exercise program, including this instructional video, as the exercises require a certain level of core strength to begin with and can result in injury. If you are looking for exercises that are safe and helpful for your current condition, please ask Dr. David as he can provide instruction!
3. Gasworks Park
On Tuesday, we visited one of my new favorite restaurants in Fremont and toured Gas Works Park before heading back! I’ve only been to Gas Works Park twice and both times, there were factors obscuring the view and thus, my impression of this popular area (ie. foggy weather and one busy Fourth of July). I had NO idea that it was this gorgeous! I didn’t take any pictures, so you’ll have to visit for yourself and take in the breathtaking views of the lake and downtown Seattle.
4. Healthy Chicken Tacos
Sour cream lives strong in this new healthy recipe I’m sharing with you! I made these yesterday to satisfy my craving for Mexican fare, and they are so easy and delicious. There’s only a few key ingredients and the rest are just spices and herbs.
Serves 3-4 people
Ingredients:
Chicken-
-3-4 chicken breasts, diced into bite size pieces
-1.5tbsp chili powder
-1tsp cumin
-0.5tsp onion or garlic powder
-0.5tsp salt
-2tbsp olive oil
-0.5tbsp minced garlic (2 cloves)
*Optional: If you have it, you could also just substitute Taco Seasoning, which a blend of these spices!
Cilantro-Lime Sauce-
-0.5cup sour cream (or plain Greek yogurt or avocado oil mayo)
-0.25cup fresh cilantro, finely chopped
-0.5tsp lime juice
-salt & pepper, to taste
To assemble-
-2 ripe avocados, sliced into half-moons
-charred/toasted tortillas
Instructions:
1.) Chop the chicken breasts into bite-size pieces and pat them dry with a paper towel.
2.) Mix the olive oil, garlic, and spices in a medium-sized bowl. Add the chicken and combine well. Marinate in the fridge for at least 10 minutes and up to 48 hours.
3.) In the meantime, combine the sauce ingredients in a small bowl (or a food processors, if you’d like), cover, and refrigerate.
4.) Cut the avocados in half, remove the pit, make vertical cuts down each half, and then spoon out the flesh onto a small serving plate or bowl.
5.) 10-15 minutes before it’s time to eat, char the tortillas on a hot pan, just a couple minutes on each side until it’s at your preferred level of doneness. Set them on a plate to serve.
6.) Lastly, cook the marinated chicken in skillet until it’s to your preferred level of doneness. (The original recipe calls for char marks.) Then, place the chicken into a serving bowl and squeeze some lime juice on top, if you’d like. **Note: If you use chicken that was frozen, be prepared for a ton of moisture, which makes it very difficult to char! If so, remove the excess moisture so that the chicken can become crispier.
7.) Bring all of the ingredients to the table and have everyone assemble by taking a tortilla, placing the chicken on top, then a couple slices of avocado, and top off with the Cilantro-Lime sauce! Enjoy!

5. Happy Birthday, My Brother!
My younger brother, Abraham, is visiting to celebrate his birthday this week! This is the man behind many of the aesthetic elements of Alight Chiropractic. If it weren’t for him, we would not have been able to pull off my interior design vision as smoothly as we did! He is the kindest, most understanding and compassionate person I know and I am always honored to grow up with him as his older sister. Happy Birthday, bro!
