A Laughably Simple & Healthy Broccoli Stir-Fry Recipe
Yes, you read that right and yes, we are still a chiropractic blog! One of our foundational beliefs at Alight Chiropractic is that wellness may start with chiropractic, but is maintained at home. Our lifestyle choices and habits all play a key role in helping our minds and bodies to maintain equilibrium. As the digestive system is strongly interlinked with the nervous system, we must do our best to support our gut by taking in helpful nutrients and nourish this important system! With that said, eating nutritious food every single day may not come easy for all of us, so we want to support you by providing quick and easy recipes that come together in a pinch, please picky palettes, and provide a powerful punch of nutrients!
Enter my Veggie Stir-Fry Recipe. As the title suggests, it IS laughably simple so if you’ll have no problem putting it into weekly (even daily) rotation! I added an extra step that makes it even faster to do and that is: meal prep. Whether you work full-time or you have mouths to feed, it also helps if you can skip a step or two when cooking up a healthy, homemade meal! I’ve made it a habit to meal prep any fresh ingredients as soon as I bring them home from the grocery store.
Meal prep the ingredients by washing them in a water bath (fill a large bowl with water and bounce the produce with your hands so that any dirt and additives can be washed away), cutting them up into bite size pieces, and drying them before tucking them away in air-tight containers in the fridge. This way, I can literally throw together this nutrient-dense side dish any day of the week with no thought or prep involved! Trust me – adding fast food convenience to eating healthy wins you half the battle already. So, let’s get cooking.
Get the Recipe:
Serves 2
Ingredients:
-1/2 cup of sliced mushrooms (we use organic Cremini mushrooms)
-1/2 cup of zucchini, sliced into half-moons
-1.5 cups of broccoli, chopped into bite-size pieces
-2-3 garlic cloves, minced (1/2tbsp maybe)
-2 tbsp of sesame oil
-2-3 tbsp water
-2-3 tbsp coconut aminos (add more to taste, if needed)
-Trader Joe’s Umami Seasoning Blend
-1 tsp fresh ginger, freshly grated
-freshly cracked pepper, to taste
Instructions:
1.) Meal prep all ingredients to your liking. Place in air-tight containers and store in the fridge.
2.) In a wok or cast iron skillet, drizzle some sesame oil (I included measurements, but I eyeball this part) and heat on medium-high. Add the garlic, mushrooms, and zucchini.
3.) Sauté until the sesame oil disappears and the zucchini’s flesh is looking vibrant.
4.) Add the water and coconut aminos. Toss in the broccoli and sauté again until the broccoli turns a bright green.
5.) Season the veggies with the Umami Blend, freshly grated ginger, and freshly cracked pepper, to taste.
6.) Once the veggies are at your desired level of “doneness,” transfer to a serving dish and dig in!
Note: If you want a frame of reference, my desired level of doneness is when the zucchini is soft and bright, and the broccoli is vibrant green and still holding up. I like them to taste as fresh as possible, without being raw!
There you have it! The easiest stir-fry recipe known to man, probably. You may have noticed I didn’t add any thickening agents (ie. corn starch) to the “sauce,” which is typical in many stir-fry recipes. This is because 1.) it takes time to thicken the sauce, 2.) this recipe doesn’t need it. The whole point of this recipe is to be quick and simple, and I adapted this recipe because I wanted to learn how to appreciate the taste of vegetables for what they are! So, this enhances the taste somewhat, but doesn’t cover it up.
Since creating this recipe, I’m proud to say that I’ve been able to incorporate veggies into at least two of my daily meals! With this simple change I’ve seen a slew of amazing benefits to my overall health: my digestion has improved, my bloating has decreased, and I’ve even lost a few pounds! So, what are you waiting for?
